Cran-Pumpkin Energy Bars
Food is the fuel that allows our bodies to run. It’s important that the foods we choose provide us with both the nutrition we need and energy we desire. Everyone needs a little energy boost now and then. What better way to pack in nutrition on the go than these delicious and healthy energy bars. Make a batch and individually wrap them to store in your freezer. Then, in the morning, grab one and go. Whether it be mid-morning, late afternoon, or just before your workout, when you need an energy boost, your bar is defrosted and ready to fuel you up!
Ingredients
Cooking spray
1 cup quick cooking rolled oats
1/2 cup roasted unsalted soy nuts
1/2 cup raw wheat germ
1/4 cup whole-wheat pastry flour
1/2 cup raw almonds
1/2 cup cranberries
1/2 cup powdered nonfat dry milk
1/2 teaspoon ground cinnamon
1/2 teaspoon pumpkin spice
1 can canned pumpkin
1/4 cup maple syrup
2 large eggs
Preheat the oven to 350 degrees F. Coat a 9 by 13-inch baking pan with cooking spray.
Place soy nuts, almonds, and oats into food processor and puree until the mixture is a powder. Pour into a large bowl; add cinnamon, pumpkin spice, wheat germ and powdered milk. Add canned pumpkin. Mix well. In a separate bowl, beat 2 eggs and add to maple syrup. Add the syrup/egg mixture to dry ingredients. Lastly, mix in dried cranberries. Mix until well incorporated into a coarse paste.
Spread onto the coated baking pan and spread evenly. Bake until just done, about 25-27 minutes.
