Edamame are brightly colored green soybeans packed with fiber and protein. They are loaded with nutrients and phytochemicals. Phytochemicals protect our hearts from oxidation, inhibit blood clot formation, function as antioxidants and also exert anti-inflammatory actions. Soybeans are high in essential fatty acids and are a good source of calcium, magnesium, lecithin, riboflavin, thiamin, fiber, folate, and iron. Traditionally edamame is steamed, sprinkled with sea salt, then popped from its pod into your mouth. Here is a different way to enjoy these magical beans.
Ingredients
1 bag of frozen edamame (shelled soybeans) can be purchased at your local supermarket in the frozen food aisle
2-3 cloves garlic– finely chopped
1 thin slice ginger root pealed and finely chopped (about the size if a nickel)
~2 tablespoons olive oil
Salt and pepper to taste
2-3 Tablespoons water
Steam edamame as per directions on bag. Puree edamame, garlic, ginger, salt, and pepper in food processor. Once all is pureed and blended, drizzle in olive oil slowly into mixing food processor. Continue to mix in blender until all
incorporated. Add water to soften. Try on a whole grain cracker, rice crackers, as a dip for veggies,
or spread on a grilled veggie sandwich. Enjoy!
*Garlic powder and ground ginger may be substituted for garlic cloves and ginger root
